10 Unsmoked, rindless bacon rashes
500g Chicken breast fillets
100 ml Vegetable oil
175g Sliced runner beans & peas
Wrap bacon around chicken breasts. Heat vegetable oil in large frying pan. Fry chicken on a medium heat for 20 minutes, turning regularly.
Stuffing:
50g Butter – 115g Parsnips, sliced – 115g Celery, sliced – 115g dried Apricots, sliced – 50g Walnuts, chopped - Fresh Parsley, chopped - Pinch Ground black pepper - 2 Tarragon leaves, chopped – 1 Chicken stock cube.
Melt butter in a saucepan. Fry parsnips and celery for 3 minutes. Add apricots and walnuts. Fry for 1 to 2 minutes. Season with parsley, tarragon and pepper. Dissolve stock cube in 100mls of boiling water and add to pan. Cook a further 5 to 10 minutes.
Boil runner beans and peas - 12 minutes - to serve.

Lia's Cookery Book
Lia's Cookery Book is Lia Christinia Farrow's dream in print – it is a self-published book which means that the author pays for the design and print, something that means they literally put their money where their mouth is.
Lia originally comes from Romania and brings her passion for cooking and her enthusiasm to her recipes, which reflect her interest in all cultures. She uses everyday ingredients that you would find in your storecupboard or supermarket. Dishes like Roast Beef Coleslaw, where home made coleslaw is made into roast beef cornets are an interesting way of serving a salad with meat and if you have ever been in a Romanian restaurant, you will recognise the presentation. Many of the recipes are British (Beef Roly Poly), Italian or French – it is a pity that we don't see more of Lia's home cuisine. I am sure there are lots of Romanians out there who would love to have a book of familiar recipes when they are away from home. Romanian Lamb Stew is an exception – it looks like a cross between an Irish and Italian stew with lamb, haricot beans and potatoes.

Just the cookery book I needed! Nicely written and fun to read, it has a wide variety of recipes with clear instructions. A number of dishes that I have tried so far have worked fantastically well and have been enjoyed by my family. Most of Lia's recipes contain a stack of fresh ingredients which I particularly like to use - raspberries are my absolute favourite! I would recommend this book to anyone who is keen to try out tried and tested recipes which Lia has added to and varied or who would like to try something a little new and different. I think that this cookery book was extremely well presented and with great detail. The front cover has got a good use of picture and all the text is easy to read. I tried a few of the recipes and thoroughly enjoyed each one. My favourite dinner was the 'Christina Bolognese' because it had a good flavour, a nice variation of vegetables and was simple to make. My favourite pudding was either the 'Summer Fruits Crème Trifle' because it had a beautiful appearance, it's colourful and a good use and mixture of fruits.

Whether entertaining to impress or cookery a nutritious family meal I do not think you could find a better, very reasonably priced cookery book than Lia’s, with its many delicious recipes using fresh herbs, as well as a variety of easily obtainable ingredients from local supermarkets. I loved the clear print and compactness of this cookery book, as I have a small kitchen and do not need a cookery book weighing 4 or 5 pounds and measuring nearly a square foot!

A very interesting cookbook full of unusual recipes, i.e. Romanian chicken & rice that you would not find in every other cookbook. That is what sets this book apart, it is not written by a TV chef, it is written by someone who has a deep passion for their cooking and the recipes are easy to understand and follow. The author has created these recipes herself with a twist on old favourites. A burger becomes jumbo steak mince burger with onion and pepper sauce. A lovely combination that immediately sets the palette watering with anticipation. To sum up I recommend this book wholeheartedly whether you are a novice cook or an experienced chef there is something in it that will appeal and delight.
